Chicken and Squash

Makes 3 Servings

 
Ingredients:
2 Large chicken breasts (cut into strips)
2 mexican squash (sliced)
1 onion (chopped)
Red chili pepper
Salt, pepper or any seasoning on hand
 
Instructions:
Cut chicken into strips and grill in pan with a little oil. Once, it is seared add the rest of the ingredients. Cook until the chicken is cooked thoroughly and the squash is soft.
 
Alternative Instructions or Variations:
Any other vegetable would be good, whatever you have on hand, such as bell peppers, or tomatoes.
 
Serve With:
Rice is good with this dish.
