Chicken or Pork Adobo

Makes 4 Servings

 
Ingredients:
1/2 kilo pork or chicken, cut in cubes for pork and cut in pieces if chicken
1 head garlic, crushed
1 cup soy sauce
1 cup vinegar
2 cups of water
5 laurel leaves (bay leaves)
4 tablespoons of cooking oil or olive oil
Whole Peppercorns
Ginger (if cooking chicken or with chicken)
 
 
Instructions:
Combine all ingredients in a pot. Let it simmer and boil until almost all the water is gone. If you did not trim the fat off the pork, let the natural oils of it come out. You may add some cooking oil or olive oil if there isn't enough to fry the meat. The meat will be very tender so be careful mixing it while letting it fry on its own fat (or added oil) so the meat doesn't fall apart or break. Viola! It's done!!!

 

 
Serve With:
Enjoying your adobo with rice and fresh tomatoes (optional).
