Chicken Pockets

Makes 4 Servings

 
Ingredients:
2 Boneless Chicken Breasts
1 Tbsp Olive Oil
1 roll of croissants
5 oz cream cheese (2/3's of an 8 oz bar)
1 Tbsp Chopped Onion
1/2 Tbsp Parsley
Salt and Pepper to taste
Instructions: Chop up the chicken breasts into small pieces the size of a half dollar and sauté the pieces with the olive oil in a frying pan until they are cooked thoroughly.  Cut through the center to ensure the largest piece of chicken is fully cooked, but this usually takes between 5-8 minutes.

Once cooked, transfer the pieces into a food processor (take caution as they will be hot!). Add the cream cheese, chopped onion and parsley to the food processor and blend until the chicken is completely chopped.

Take the croissants out of the roll and take two triangles and put them together to make a square. Scoop up some of the chicken mixture and put it in the center of the croissant square. Put enough mixture into the center to make a small ball and enclose the mixture by pulling up the sides of the croissant until the mixture is encased and sealed. There should be 8 croissants in the package, so you can repeat this process to get a total of 4 chicken pockets. Place the chicken pockets on a greased cookie sheet and follow the directions on the croissant package for baking instructions. Once the crust turns a golden brown, the chicken pockets should be ready to eat.

 
Serve With:
Any fresh vegatable - but for a quick delicious side, steam some broccoli and use lemon pepper to season.
