Easy Cheese Steak Sandwiches

Ingredients:
sliced roast beef from deli - just the plain kind, not Italian
sliced mushrooms
slivered green pepper and onions
provolone cheese, sliced
sub roll
mayo and/or mustard - I mix them together
 
 
Instructions:
Lightly sauté the veggies in a touch of olive oil and add the roast beef that you just chop or tear. Stir it all together to heat but don't over cook or the veggies will be too limp. While it's still in the pan put the slices of provolone on top of the mixture. Cover pan to melt cheese. Spread a little mayo/mustard on the roll and plop some of the meat mixture into the roll. Can top with lettuce or tomato, but they are so yummy that no one wants to wait and they get gobbled as is!

You can't mess this up. No measurements or amounts. Just guess... it always works! This is so easy and yummy. I don't make anything with too many ingredients and it has to be fast.
