Lemon Porkchops

Makes 4 Servings

 
Ingredients:
4 Porkchops or Pork cutlets (if using Porkchops, pound thin with meat tenderizer/mallet)
Olive Oil
Juice of 1 Lemon
Chicken Stock
Garlic Cloves
Flour, Salt and Pepper
 
Instructions:
Prepare pork by pounding as thin as possible. In a shallow bowl or baking dish, combine about 1/2 cup of flour, salt and pepper.

Heat a few tablespoons of olive oil in a large skillet. Dredge pork in flour mixture and place in skillet. Brown both sides of the meat, and remove from pan.

To the pan, add 2 crushed garlic cloves and the juice of 1 lemon. Stir up all the flour bits from bottom of pan, add a bit of the flour left in your dredging dish to thicken sauce, and add 1 cup of chicken stock. Stir well.

Place pork back into sauce and simmer until pork is tender and sauce has thickened. Add more salt and pepper if desired.

Serve over pasta or rice.
 
Alternative Instructions/Variations:
This can also be made with chicken, either boneless or bone-in. Adjust according to amount of meat to be cooked. Your kids will love it...this is a family favorite in our home!
 
Serve With:
Vegetables and/or salad.
