Roasted Polish Sausage with Potatoes & Onions |
Makes 4 Servings |
| Ingredients: 1 Package of Hillshire Farms Polish Sausage 5 Red Potatoes Cut into wedges 1 Large Yellow Onion rough chopped 4 tbs Extra Virgin Olive Oil 1 tsp Salt 1 tsp Black Pepper 1 tsp paprika 1 sprig of fresh basil (remove stem) 1 bay leaf 2 cloves of garlic minced (or two tsp of minced garlic) 4 cups chicken stock |

| Instructions: In a sauce pan add the extra virgin olive oil into the pan then add the herbs and half the salt and pepper. Add the onions to the pan and caramelize them then add the wedged potatoes to the pan and lightly brown the potatoes to add both color and flavor. To the pan add the remaining salt and pepper and brown the polish sausage. Place all ingredients in the bottom of a casserole dish. Pre heat your oven at 350. In the bottom of the sauce pan there are many seasonings left add half of your chicken stock to the hot sauce pan and gently with a wooden or plastic spoon deglaze your pan. Then take that broth with the other remaining stock and add to the casserole pan. Insert into your preheated oven for 25 minutes or until potatoes are cooked through.

| Serve With: Serve fresh frozen green beans. Sauté them in a pan with a little garlic and lemon pepper and salt in two teaspoons of olive oil. Steam until lightly wilted. Beans should still be a little crunchy and by cooking them this way you preserve the nutritional value. |
