Sneaky Spaghetti

Makes 5 Servings

 
Ingredients:
1 jar organic spaghetti sauce ( I use Bertolli)
1/2 cup carrots
1 celery stalk
3 cloves garlic
1 small onion
1 cup fresh spinach
1 lb whole wheat spaghetti (Barilla)
Olive oil
Salt & Pepper
Parmesan Cheese
 
Instructions:
Place all of the fresh veggies into your food processor ( you may have to chop them into smaller pieces first ) and puree. I run my processor until it almost forms a paste.

Heat olive oil in a large nonstick skillet over medium high heat. Add the veggie puree and season with salt and pepper.

Sauté for about 5 minutes until the veggies have softened and become aromatic.

Lower the heat to medium low and add the jarred sauce. Stir to combine and let simmer for 10 minutes.

Cook the past in heavily salted boiling water.

When pasta is done, ladle out about a cup of the cooking liquid before draining the pasta.

If your sauce is to thick you can use the pasta water to thin in out to the consistency you like.

The sauce is thick and hearty and filled with veggies...but nobody will be able to tell!

Serve over hot pasta and top with parmesan cheese.
 
Serve With:
Simple bagged salad and baguette.
