Quick & Easy Spaghetti Sauce

Makes 6 Servings

 
Ingredients:
1 pound lean ground beef (feel free to substitute ground turkey if desired)
Olive Oil to coat pan
2-3 cloves garlic, chopped fine or run thru your garlic press (I LOVE the Pampered Chef garlic press NO peeling!)
1 medium onion chopped fine
1 shredded carrot (I buy the already shredded carrots in the bag saves time!)
1 zucchini ? cut into slices then quarter each slice
sliced mushrooms
1 - 28 ounce can crushed tomatoes
salt & pepper to taste
Italian seasoning to taste (about 2 tablespoons)
 

Instructions:
Brown ground beef & drain. Set aside. Add olive oil to saucepan (enough to coat bottom). Add your garlic & onions and salt for about 2 min. Add your ground beef to the sauce pan along with all the remaining ingredients. Simmer for about 20 min until veggies are tender (less time if you like your veggies crisp-tender). Taste & adjust seasoning if needed. Serve over your favorite pasta (we love angel hair pasta & it cooks quickly!).

 

Alternative Instructions:
Feel free to use whatever kind of veggies your family loves.  Yellow squash, olives, red peppers etc.  This is a great way to get your kids to eat veggies and they won't even know it!  I cut my veggies pretty small for quicker cooking & they are less noticeable to my kids.

If you prefer fresh herbs instead of dried seasonings, use fresh basil & oregano instead of the dried Italian seasoning.  Add at the end of the cook time (basil will get bitter if cooked too long).

Make a double batch and freeze half of it.  Now you will have a quick meal all ready for you after a busy day!
