Potatoes Au Gratin

Makes 4 Servings

 
Ingredients:
3 small or 2 large potatoes (sliced)
3/4 cup cheddar cheese (shredded)
2 cups milk
2 tbsp butter or margarine
2 tbsp flour
Salt and pepper
 
 
Instructions:
Boil the potatoes until soft but not falling apart. Meanwhile heat butter until melted, add flour, beat and then beat the milk in slowly. Bring to a boil then lower heat to med-low. As it thickens, add about half the cheese. Mix this sauce with the potatoes and layer the potatoes with the rest of the cheese in a casserole dish. Microwave just long enough to melt the cheese.

Alternative Instructions:
You can add cooked bacon, ham, or sausage if you want to turn it into an entree.
